Meet your new favorite: Jalapeño Loaded Nachos.

Nachos, with a Taste of Mexico 🇲🇽

Nachos are a beloved snack that originated in northern Mexico. The story goes back to 1943, when Ignacio “Nacho” Anaya created a simple dish of tortilla chips topped with melted cheese for a group of guests in Piedras Negras, Coahuila.

Since then, nachos have taken on countless variations, from classic cheese-covered chips to fully loaded trays piled high with toppings.

For this version, we’re bringing together two things that make Mexican-inspired food so delicious: bold chile flavor and fresh ingredients.

Melted yellow cheese and shredded cheese create that irresistible, gooey layer, while diced tomatoes, serrano peppers, and onion add a fresh, crisp contrast.

And to finish? Don Chilio Jalapeño Chili Crisp, made with real Mexican chiles and 100% olive oil, adds crunchy texture and a flavorful kick to every bite.

What Is Salsa Bandera?

One of the simplest ways to add fresh flavor to a dish is with salsa bandera, a Mexican salsa made with chopped tomatoes, green chiles, and white onion.

Its name means “flag salsa,” inspired by the colors of the Mexican flag: red from the tomatoes, white from the onion, and green from the chiles.

It’s a fresh, colorful combination that adds brightness and a little heat without overpowering the rest of the dish.

For these nachos, we’re using serrano peppers to bring a sharper chile flavor that pairs beautifully with the green jalapeño notes in Don Chilio Jalapeño Chili Crisp.

The result? Creamy, cheesy, crunchy, fresh, and spicy—all in one bite.

The secret to a great topping is balance.

Salsa bandera brings freshness, while Jalapeño Chili Crisp adds crunchy texture and a deeper chile flavor. Together, they create a combination that complements the melted cheese without making the nachos feel too heavy.

Want more heat? Add extra Chili Crisp just before serving. Prefer a milder bite? Remove the serrano seeds and start with a smaller amount of Chili Crisp.

And remember: adding the salsa bandera after baking keeps its fresh texture and vibrant colors intact.

Instructions

  1. Prepare the Salsa Bandera Dice the tomatoes and white onion into small pieces. Finely chop the serrano pepper, removing the seeds if you prefer a milder salsa. Combine everything in a bowl, mix well and set aside while you prepare the nachos.
  2. Layer the Chips Preheat your oven to 375°F (190°C). Spread the tortilla chips evenly across an oven-safe tray or baking dish, keeping them in a relatively even layer so the cheese reaches as many chips as possible.
  3. Add the Cheese Drizzle the yellow cheese sauce over the chips, then sprinkle the shredded cheese on top. Using both gives you creamy cheese sauce and that stretchy, melted layer that makes nachos irresistible.
  4. Bring the Heat 🔥 Spoon 2–3 tablespoons of Don Chilio Jalapeño Chili Crisp over the chips and cheese, distributing it across the tray.
  5. Bake Until Melty Bake for about 5–8 minutes, or until the shredded cheese has melted. Keep an eye on the chips so they stay crispy and don’t burn.
  6. Top with Salsa Bandera Remove the nachos from the oven and let them cool for a moment. Spoon the fresh salsa bandera over the melted cheese.
  7. Finish with More Chili Crisp Add one final spoonful of Don Chilio Jalapeño Chili Crisp over the top. Serve immediately while the cheese is warm and the chips are crunchy.
